- Learn and understand how to carry out the basic functions in every section of the kitchen
- Prepare, assemble and present dishes to a consistently high standard using fresh and unfinished product
- Meet high standards of compliance and hygiene including working with HACCP and allergens
- Gain a commercial understanding of the kitchen including preparing to specification, production numbers, portion control and waste management
- Learn about section management including food storage and stock control
- Be involved in the creation of specials using a range of produce
- Attend the following workshops to boost your knowledge, skills and behaviours:
- Bakery and patisserie
- Bread and dough
- Game and offal
- Shellfish and fish
- Vegetables and vegetable protein
- Complete an End Point Assessment
- Have GCSE (or equivalent) in English and maths and be willing to work towards continual development of functional skills during your programme
- Be eager to learn and participate in on-job and off-job training
- Be organised and committed to completing your assignments on time
- Be willing to travel to complete your programme workshops
