  • One (1) year of verifiable institutional cooking experience.
  • Willingness and ability to work weekends and holidays as scheduled.
  • Willingness and ability to lift to 50 pounds.
  • Successful completion of the due diligence process to include, but not limited to, a Level II background check and drug test.
PREFERRED QUALIFICATIONS:
  • High school diploma or GED.
  • Willingness and ability to work overtime as necessary.
  • Basic computer skills.
POSITION DESCRIPTION:
  • The incumbent will work under the supervision of the Food Service Director and the Food Service Administrator in the day-to-day food service operation at the State Veterans' Nursing Home.
  • The Food Control Specialist (FCS) may act as the Food Service Administrator when that staff member is absent from the facility.
  • Ensure that food is stored, prepared, distributed and served under sanitary conditions.
  • The FCS will ensure compliance with state and facility safety procedures in the operation of food production and cleaning of equipment.
  • The FCS will ensure that clean and sanitary conditions are maintained in all areas of the kitchen food preparation and serving lines; turn on and set temperature on grills, stoves, deep fryer, and broiler.
  • The FCS will be required to operate and maintain equipment used according to FDVA procedures.
  • The FCS will be responsible for food estimate requirements and preparation/cooking of all types of hot and cold food items according to menu and approved recipes in Meal Tracker.
  • Conduct inventory checks of food items and order items as needed; reorders items falling below minimum on weekly basis.
  • Plan, organize and coordinate work assignments.
  • Checks and approves food requisitions, deliveries and issues receiving reports.
  • Attends in-service training classes and performs related duties assigned by supervisor.
  • Perform other duties as assigned.
