Pastry Cook deals with the day to day of business and upcoming banquet events. Supporting the Main Kitchen Chef in developing concepts and execution. Sets standards and objectives for each outlet. Your duties will include overseeing the baking of pasties for confectionary displays, scheduled events, and special requests. Coordinates events, creates dishes, and prepares a specialty of desserts, pastries, and baked foods. Familiar with a variety of the field's concepts, practices, and procedures. Relies on experience and judgment to plan and accomplish goals. Performs a variety of complicated tasks. Reports to the Executive Chef.Essential Functions:
1. Responsible for redefining hospitality at Graton Resort & Casino while living, supporting, and promoting our values.
2. Demonstrate knowledge, understanding, and application of various cooking and baking techniques.
3. Prepare ingredients such as doughs, batters, fillings, and toppings, ensuring proper measurements and proportions.
4. Decorate pastries and desserts with precision and artistic flair, using techniques such as piping, glazing, and garnishing.
5. Perform tests to ensure the dough or batter is mixed to the right consistency.
6. Monitor baking progress using specific tools like thermometers and toothpicks.
7. Keep bakery area as well as tools clean and organized.
8. Properly label and store ingredients.
9. Follow plating and display standards.
10. Follow safety and health guidelines in accordance with all public health and sanitation regulations.
11. Other duties as assigned.
