This role will play a key part in continuing to uphold our reputation and providing exceptional service to our guests.The Broadmoor Certified Culinarian Apprenticeship Program is dedicated to the development and mentorship of passionate and engaged culinary professionals throughout the industry. Our goal is to give the next generation of our industry the real world, practical knowledge, and experience that they need to be leaders in the industry and practitioners of the craft of professional cooking.Our program is a fundamental one-year program designed to train chefs and provide a fundamental culinary education. Qualified candidates for enrollment will have a minimum of a High School Diploma or a GED with 2 years of entry level culinarian experience. Successful apprentices will excel in classical cooking fundamentals and graduate from the program as a leading culinarian. Our goal is to graduate apprentices into a Lead Cook 1 role at The Broadmoor.This 12-month long progressive program, focuses on monthly progressive curriculum designed to engage the apprentice and create a competitive feel to the program. These assignments will allow the apprentice to engage with their chefs & mentors, learn a variety of cooking methods and to accept constructive criticism throughout the process.Within the one-year program, the apprentice will have approximately 6 each 2-month rotations through a selection of the following possible locations:
  • Banquet Garde Manger, Broadmoor Butcher Shop, Banquet Pastry, Lake Terrace Dining Room Breakfast, Play at The Broadmoor, La Taverne
All apprentices are tasked to complete the ACF Digital requirements which include the following: to complete 2,000 hours of skilled work, to upload all digital continuing education requirements provided from the ACF as well as complete courses of 30 hours in Nutrition, 30 hours in Food Safety & Sanitation, and 30 hours in Supervisory Management, Dining Room Service & Beverage Management, Purchasing & Receiving, Food Preparation 1, and completion of 1 Elective Course related to Culinary Arts.Throughout the program the apprentices will be working towards the Certified Culinarian program through the ACF. This will include a written exam and the completion of a cooking practical. Once both the written exam and the practical exam are passed and the ACF digital work is completed the student will be awarded the Certified Culinarian document from the ACF to state that the individual has met the national knowledge and skill standards.The Serve Safe exam will be provided to the individuals with the expectation of full class compliance and a minimum passing rate.   • Precise & accurate preparation of all menu items in assigned station & kitchen in a timely fashion & with a sense of urgency.
  • Maintain clean, organized, safe and sanitary station, kitchen & storage areas.
  • Maintain a comprehensive knowledge of Forbes and AAA standards. Maintain Forbes Five-Star and AAA Five-Diamond ratings. Additionally, further our reputation in the industry and to continue to redefine the 5 star/5 diamond luxury experience.
  • Have a knowledge & ability to understand & adjust recipes according to business levels.
  • Have up-to-date Servesafe certification.
  • Follow all hotel and kitchen policies and procedures as outlined in the employee handbook.
  • Take required breaks, notifying supervisor prior to leaving kitchen.
  • Make sound judgment calls and decisions based upon principles outlined in our Culinary & Stewarding Promises on our F&B Credo Card.
  • Work well under pressure in a fast paced environment.
  • Work cohesively as part of a team.
  • Willingness to work in a fast-paced, team-oriented environment
  • Uphold and abide by all Broadmoor policies, procedures, and safety guidelines

  • While performing the duties of this job the employee is regularly exposed to wet or humid conditions (non-weather), work near moving mechanical parts, extreme cold (non-weather) and extreme heat (non-weather).
