- Lay out goals and develop strategies to accomplish objectives.
- Forecast necessary revenues and expenses.
- Stay in tune with departmental needs as they relate to production and staffing.
- Forecast work schedules, control labor thru LMS for all restaurant employees.
- Utilizes multi-faceted marketing avenues to achieve financial success and public awareness, including social, guerrilla and traditional marketing strategies.
- Oversees the initial hiring and training of all new and current employees, and conducting on-going training classes for both managerial and hourly staff.
- Responsible for overseeing control standards, performance, employees' conduct, dress code, appearance, sanitation, etc., according to established.
- Formulate and recommend changes to improve employees' performance and teamwork.
- Keep employees informed about policies and changes. Develops analyses and implements merchandising that meet the profile of guests.
- Manages and controls overall expenses of the outlets focusing on higher revenue and profit.
- Ensure employees have total knowledge as to all menu items, how they are prepared, what ingredients are used, etc. and total knowledge of wine list.
- Work in co-operation with the Chef to ensure top quality.
- Participate in Executive and Food and Beverage meetings.
- Stay informed and market special events.
- Retain records of regular customers, their eating habits and special requests.
- Manage waste cost at a minimal level.
- Maintain inventories and bar stocks.
- Ensure that all equipment is kept in perfect working condition. Reports any deficiency to the proper department.
- Ensure that all materials and supplies are available when needed.
- Respond to any emergency, safety situation or accident accurately and promptly and retain accident reports.
- Perform other tasks or projects as assigned by management and staff.
- Interview, hire and train all team members.
- College degree in a related field preferred.
- 3-5+ years of management experience in a fine dining environment.
- Thorough knowledge of all health and labor regulations related to restaurant operation.
- Excellent interpersonal communication and negotiation skills.
- Ability to use appropriate interpersonal styles and methods to guide employees toward goal achievement.
- Flexible, open-minded, adaptable to change, with strong organizational, management and time management skills.
- Strong analytical, data management and computer skills.
- Must have a current California Food Handler Card or willingness and ability to obtain California Food Handling Card before first day of employment.
