The CompanyMy client is a globally operating restauranteur that operate in 75 countries. They are the go to partner for food and hospitality services for large venues including shopping malls, airports and train stations within locations from Europe, down through the Middle East, India to Asia Pacific. They specialise in airport restaurant operations, design, concepts and development through to execution. They are an extremely successful volume based business that are passionate about supporting their staff to succeed, grow, develop and progress in their careers. Having just won a 7 year tender over 6 outlets in the Gold Coast Airport, it is an extremely exciting time to get on board and join the team!The roleAs the Kitchen Manager, you will oversee 4 very different style food and beverage outlets including:

Italian inspired bakery which serves sandwiches, toasties and croissants
Salad counter where you will find fresh produce, salads, pokie bowls and wraps
Asian cuisine serving noodles, rice and spring rolls
Sushi counter where you will find fresh sushi, rice paper rolls and cold bowls

Overseeing a team of up to 50 people who work over a range of shifts within a 7 day period, you will have a number of tasks require you to be hands on and leading from the front when needed, as well as managing operations in thbe background to ensure your teams and outlets are running smoothly whilst adhering to health and safety regulations at all times.Responsibilities:

Rostering and team management
Preparation and delivery of menu items
Ordering and managing stock/waste management
Implementing a production schedule
Menu development and preparation
Ensure positive and professional communication between FOH and BOH teams
Train staff and develop staff in your work area and monitor their performance
Ensure that all products are of a consistent quality and excellent standard and that this is maintained at all times
Ensure the facility is maintained and presented in a safe, clean, hygienic and professional manner
Adhere all safety and security standards of the company and the airport
To deliver job training and coaching for all employees according to the vision/values (induction) training and the Be My GUEST training
To make use of the 5 minute briefings every shift to make sure the company culture is understood perfectly by all associates. To motivate Team Leaders to do 5 minute briefings during every shift and see the benefits of those briefings.
To manage the store on a daily basis and delegate tasks to do this in the most efficient way
To coordinate and oversee monthly stock take for both Kitchen facilities
To record wastage at all times
To closely monitor PAR levels and stock levels
To assist in overseeing food costings to control the cost of goods to budgeted levels or lower

What you need

Excellent knowledge and working history in the hospitality industry
Hands-on and flexible to ensure operational needs are met in an unpredictable working environment
Excellent people skills
Demonstrates team management, delegation, issue resolution, coaching skills and ability to motivate others
Ambitious, energetic, positive and takes on challenges
Takes initiative and is result-oriented
Holds a Food Safety Supervisor Certificate
