Comiskey Management Services Pty Ltd trading as Dakabin Hotel is looking for an experienced Chef or cook to assist in the operation of our diverse range of high volume food outlets.

The Dakabin Hotel is a new, multi million dollar development by the Comiskey Group, renowned for venues like Sandstone Point Hotel and Eatons Hill Hotel. Situated on a 3.75-hectare site at the corner of Alma and Old Gympie Roads in Dakabin, Queensland.

Designed to be a landmark destination, the Dakabin Hotel will feature a striking triangular architectural design. The venue will offer a variety of amenities, including a restaurant with indoor and outdoor dining areas, a sports bar equipped with TAB facilities, a gaming room, and a large children's play area featuring an indoor basketball court. 

The restaurant's menu will focus on modern Australian cuisine, incorporating pub favourites with an Asian influence, and emphasizing the use of locally sourced produce. The dining spaces are designed to provide a relaxed environment, featuring natural color palettes, comfortable furnishings, and indoor-outdoor areas enhanced with intricate brickwork and natural textures.

To be considered for the role you need to have a relevant industry qualification and at least 2 years' experience in a similar position.

SKILLS & EXPERIENCE

  • Must display excellent prep, cooking and plating skills
  • Strong emphasis on quality and consistency of dishes
  • Demonstrate a keen Interest in growing food trends and techniques
  • Ability to contribute to menu planning, food cost estimation and food cost control
  • Work with the management team on food preparation and seasonal menu planning
  • Stock ordering
  • Labour cost control and assist the owners with rostering
  • A sound knowledge of food safety, hygiene and WHS
  • Immaculate presentation and grooming
  • Ability to handle large service numbers
  • Above average customer care and service skills
  • Chef de Partie needs to be able to train our junior team on cooking techniques and procedures
  • Assist with staff hiring and training
  • planning menus, estimating food and labour costs, and ordering food supplies
  • Discuss customer requirements and request with the frost on house team
