- Preparing for service, which includes ensuring the kitchen is well stocked with the necessary ingredients, as well as cleaning, cutting and marinating food.
- Cooking, plating and serving food while co-ordinating with other kitchen staffs, junior chefs and wait-staff.
- Hiring and training junior chefs.
- Creating new dishes and planning menus.
- Ordering foods and dry goods and rostering.
- Maintain correct level of fresh, frozen and dried foods in the storeroom.
- Adhere to stock rotation, stocktaking, and minimum wastage guidelines.
- Budgeting and costing ingredients and dishes.
- Ensure hygiene standards are maintained at a sufficiently high level and an approved food safety plan is implemented.
