- · Minimum three-year experience in a commercial kitchen.
- · Certificate IV in Commercial cooking
- · planning menus, estimating food and labour costs, and ordering food supplies
- · Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs.
- · monitoring quality of dishes at all stages of preparation and presentation
- · discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff
- · Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers.
- · demonstrating techniques and advising on cooking procedures
- · preparing and cooking food
- · Determine production schedules and staff requirements necessary to ensure timely delivery of services.
- · Supervise and coordinate activities of cooks and workers engaged in food preparation.
- · explaining and enforcing hygiene regulations
- · Recruit and hire staff, including cooks and other kitchen workers.
- · Providing effective training to staff
